Coconut cake: A significant delicacy of Ben Tre Province

For a long time, coconut cake has been popular in Ben Tre Province as a kind of snack as well as an offering to ancestors in festive events.

It combines two kinds of coconut: land coconut and water coconut. While water coconut is used to make the cover for the cake, land coconut is used to make the fillings.

The cover of the cake is made of coconut leaves while the fillings include sticky rice flour, banana or mung beans, black beans, coconut flesh, some salt and sugar.

Although the ingredients are simple, the method to prepare the cake is rather time-consuming and complicated.

When eating the cake, people feel the harmony of coconut leaf, coconut flesh, sticky rice, and beans.

An event took place in the Mekong Delta province of Ben Tre on June 27 to recognise the 222 coconut-based dishes.
