(BGO) – The northern province of Bac Giang is well known for lychee and many rustic specialties in which Ke rice cracker boasts distinctive flavour. Though the hometown treat is sold at very cheap price, it leaves deep impression on visitors.

Ke rice crackers have distinctive flavour that could not be found anywhere else. Just trying a bite, diner can enjoy the sweet of rice, the flavour and buttery taste of sesame and peanuts. All are harmonized in each crunchy bite that creates unforgetable impression.

Ke villagers use to make the crackers with two layers of batter at specific thickness.

There are two kinds of crackers with yellow and black sesame. Main ingredients consist of good rices that were harvested long time ago. After thoroughly soaked in pure water for a while, the rices are grinded. Sometimes people use cooked rice to grind together with rice to make a batter.

Ke villagers use to make the crackers with two layers of batter at specific thickness. The cakes are sprinkled with sesames and peanuts. Then they are carefully taken and put on large flat bamboo baskets for drying.

Once one side of the cake already dries, it must be flipped quickly to prevent it to stick to the basket surface or be cracked. Finished cakes are then stored.
